Squash Bread

Let's Read: Bread, Bread, Bread - Squash Bread

  • 1½ cups of flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 eggs
  • ¾ cup sugar
  • ½ cup oil
  • 2 t vanilla  
  • 1 cups zucchini or yellow squash, shredded and packed tightly in the cup

Preheat the oven to 350 F. Grease a 9" by 5" by 3" loaf pan with vegetable oil.

Mix the flour, cinnamon, baking powder, baking soda and salt together in a medium sized bowl. Beat eggs until frothy in a mixing bowl. Add the sugar, oil and vanilla. Beat until the mixture is lemon colored. Stir in the squash. Add the dry ingredients from the other bowl. Mix until they are just moist.

Pour the mixture into the loaf pan. Bake 40 minutes or until a toothpick inserted into the center of the loaf comes out clean.

Cool on a rack and remove from the pan after 10 minutes.

Your child can help stir the dry ingredients together, add them to the egg mixture or check the toothpick to see that it is clean. They will enjoy getting to help in the kitchen, and everyone will enjoy the bread.
